TAMALES

INGREDIENTS:
1 cup powdered rice or rice flour
1 cup coconut milk
2 to 2-1/2 cups chicken broth
1/4 tsp. brown sugar
1-1/2 tsp salt
1/4 tsp pepper
3 tbsp. peanut butter
1/2 cup cooked pork, cut into strips
1/2 cup cooked chicken breast, cut into strips
Slices cooked ham
1/2 cup thinly sliced chorizo or pepperoni
2 hard cooked eggs, sliced

PROCEDURES
1. Toast rice flour over moderate heat until golden brown. Remove from heat and gradually add coconut milk stirring until smooth. Stir in peanut butter, salt, sugar and pepper.
2. Return mixture to stove. Add chicken broth, cook stirring until it turns into a thick paste. Lower heat and continue stirring for 10 minutes. Correct the seasonings.
3.  Combine 1/2 of the pork, chicken, ham and chorizo with the cooked mixture. Transfer to a rectangular serving dish or a 9″ pie plate. Flatten top, arrange remaining meat and hard cooked eggs on it.
