1 large fish (lapu-lapu or apahap), cleaned
4 tomatoes, chopped finely
2 onions, chopped finely
1/2 cup bread crumbs or cornstarch
oil for deep frying
2 tbsp chopped spring onions for garnishing
3 tbsp patis
1 tbsp calamansi juice
1/2 tsp ground pepper
4 cloves garlic, minced
1. Prepare marinade by combining patis, calamansi juice, pepper and minced garlic. Soak fish in this
mixture for 4-5 hours. Drain but save marinade for later use.
2. Roll fish in bread crubs or cornstarch. Deep fry until golden brown. Drain and set aside.
3. Sautè garlic (drained from marinade), onion and tomatoes. Pour in marinade and cook until it becomes a thick sauce.
4. Put fried on a serving dish, then pour sauce on top. Sprinkle chopped spring onions before serving.
