1 kilo beef, sliced as for Morcon, 3/4 inch thick, in one piece
2 tablespoons calamansi juice or approximately 5-6 medium size calamansi
1/4 cup soy sauce
4 pieces Vienna Sausage or hot dog, cut into 4 diagonally
4 pieces sweet pickles, cut into long strips
2 hard boiled eggs, sliced
100 grams cheddar cheese, cut into strips
1/2 piece carrot, cut into long strips
3 slices bacon (optional)
2 tablespoons flour
1/4 cup cooking oil
3 pieces bouillon cubes dissolved in 3 cups boiling water
1/4 teaspoon salt
Spring parsley

Marinate beef in calamansi juice and soy sauce. Arrange the strips of Vienna sausage or hotdog, pickles, hard boiled eggs, cheese, carrots and bacon on marinated beef. Roll neatly and tie with string. Dredge in flour then brown in hot cooking oil. Transfer to a big saucepan. Add bouillon water. Season with salt. Cover and simmer until beef is tender. Slice and arrange in a platter. Pour sauce on top and garnish with spring parsley.

Serves 10.
