MAJA WITH YAM

Ingredients:

1 kilo yam (ube)
1 cup uncooked rice
3 cups coconut milk
2 1/2 cups white sugar
powdered anise

Procedure:

Peel the yam and slice thinly. Immerse in water and boil until it softens. Crush well and strain in a mesh-type strainer. Soak rice in 1 1/2 cup water. Grind rice. Combine ground rice, yam, sugar, coconut milk, and anise. Cook in moderate heat until it thickens and fine consistency is achieved. Remove from heat and place in an oiled pan or deep platter. Allow to cool. Serve sliced and garnish with grated coconut.
