HUMBA 1

Humba Ingredients:
1 pork leg, cleaned and chopped
4 racks pork ribs
2 tablespoons crushed garlic
1 tablespoon whole peppercorns
1 spring oregano
1 bay leaf
1/2 cup vinegar
1/2 cup brown sugar
1/4 cup soy sauce
6 cups water

Humba Procedures:
1. Put the pork leg and ribs in a bowl.  Add the remaining ingredients ( except water) and mix well.
2. Marinate for at least an hour.
3. Transfer the mixture to a saucepan.  Add water and bring to a boil.
4. lower the heat and simmer until the pork is very tender, about 1 1/2 hours.
