KALDERETANG KAMBING (GOAT MEAT CALDERETA)






Ingredients:

1 kilo goat meat

2 pieces onion

3 pieces tomatoes

½ kilo potatoes, quartered

1 can green peas

1 can bell pepper, sliced into thin stripes

2 cloves of garlic

¼ kilo grilled liver or 2 cans of liver

1 boiled egg

2 chili pepper (siling labuyo)

vinegar

salt

ground black pepper

Procedure:

  1. Sliced goat meat into medium sizes. Saute garlic, onion, and goat meat.

  2. Season with vinegar, ground black pepper, salt, and chili pepper. Add the sliced bell pepper.

  3. Boil until goat meat is tender. Allow the ground black pepper to dissolve and add in potatoes. Thicken the sauce by adding in the grilled liver, pounded until juice is extracted.

  4. Add in green peas when almost cooked.

  5. Garnish with sliced boiled egg before serving in a dish platter.
