Ingredients:
Bread flour (50 kg)
Water (27.5 kg)
Refined sugar (9 kg)
Vegetable shortening (2.5 kg)
Salt (0.86 kg)
Instant yeast (0.38 kg)

Procedure:

    1. Preheat oven at 175°C (350°F)
    2. Mix all ingredients.
    3. Knead the dough, place in bowl, cover with damp cheesecloth and leave for two hours.
    4. Punch dough to remove air.
    5. Divide the dough into 16 equal portions (about 550 grams per piece).

    Syrup:

    1/4 cup sugar

    1 cup water

    3 eggyolks

    1/2 ground almonds

    1/4 cup butter

    PAN DE LECHE

    INGREDIENTS:

    4 cups all purpose flour
    1 cup milk, scalded and cooled
    1 ounce active yeast
    1/2 pound melted butter or margarine
    1/2 cup granulated sugar
    1/2 tablespoon salt
    4 large eggs, beaten
    1 teaspoon vanilla extract

    EGG WASH:
    2 eggs

    4 tablespoons sugar
    1/4 cup water
