Calderetang Pato Ingredients:

1 kilo whole duck
4 cloves garlic
1 large onion, halved
1/2 tablespoon whole peppercorns
1 tablespoon chopped garlic
2 tablespoons chopped onions
1/2 cup sliced tomatoes
1/4 cup soy sauce
2 cups water
1 cup tomato paste
1 bay leaf
2 medium potatoes, cubed
1/4 cup cubbed carrots
3 medium bell peppers, sliced
1/4 cup pineapple tidbits
1/4 cup chopped pickles
salt and pepper to taste

Calderetang Pato Procedures:
1. Boil the duck in water with the garlic cloves, onions, and peppercorns over medium heat until tender, about 30 minutes.
2. Drain and cut into cubes or your desired size.
3. In a pan, heat some oil then saute the garlic, onions, tomatoes, and duck.  Add soy sauce. Cover pan and simmer for 5 minutes.
4. pour in 1/2 cup water and season with some ground pepper.  Simmer until almost dry.
5. Add tomato paste, bay leaf, and the remaining water.  Stir to mix then simmer until the sauce thickens.
6. Add the potatoes, carrots, and bell pepper.  Simmer until vegetables are tender. Add pineapple tidbits and pickles.  Season to taste.
