3 cups bamboo shoots, grated and blanched

1 cup tofu, finely chopped

5 cloves garlic, pounded

4 tablespoons calamansi juice

1 teaspoon salt

1 medium-sized onion, finely chopped

1 ½ tablespoons soy sauce

5 tablespoons cooking oil


  1. Saute garlic and onion in oil. Add the tofu. Cook, stirring continuously.

  2. Add soy sauce and bamboo shoots and continue until bamboo shoots are cooked.

  3. Add 1 cup of water and ? cup of soy sauce if bamboo shoots are not yet cooked.

  4. Add calamansi juice and continue cooking until half of water has evaporated.

  5. Add oil and cook for 6 more minutes. Add salt to taste.
