3 cups young bamboo shoots, sliced and blanched
1 cup sliced gluten or tofu
5 cloves garlic, chopped
4 cups calamansi juice
Salt, to taste
1 medium-sized onion, chopped
1 1/2 tablespoons soy sauce
2/3 cup gluten water
5 tablespoons cooking oil


Sauté garlic and onion until brown. Add the tofu or gluten. Stir mixture. Add soy sauce and bamboo shoots. Simmer over low heat. While the bamboo shoots are not yet cooked, add gluten water. Add calamansi juice and continue cooking until water has evaporated. Add cooking oil and continue cooking for 6 more minutes. Add salt to taste.

Good for 4-6 servings.
